    Do you like the biriyani of malabar but don't know how to make and the recipies  you find are quite tedious and  time consuming? I have also felt the same way before but now I know the easiest way to make biriyani and I will share it with you all.   
      Traditionally, the process of making biriyani is a time consuming job. You need to keep the meat marinated for 4 to 5 hours or overnight. Nowadays we are not so patient as our grandparents and need everything fast. I am going to give you simple instructions on how to make biriyani the simplest way .This will definitely work for even if you are not a ' pro' cook and don't worry it won't be a disaster😊
Ingredients 
1.Chicken -  1kg
2.Onion - 4 -5 medium sized 
3.Tomato-2-3 medium sized
4.Chillies-12-15 according to your taste
5.Ginger-garlic paste-2tbsp
6.Curry leaves - 2 sprigs
7. Mint leaves
8. Salt
9. Garam masala -1/2 tsp 
10. Turmeric powder-1 tsp
11.Fennel powder - 1tsp
12. Yogurt-2 tbsp
13. Spices- cardamom,cinnamon sticks,cloves etc. 3 to 4 ps. each
14. Jeerakasala rice - 3 cup



Now we will start making biriyani. Cook in a non-stick heavy- bottomed vessel. Cut onions and tomatoes and put it in the vessel. Pour some oil and some salt to taste in it and sauté on medium flame until the onions are translucent. Meanwhile grind chillies ,ginger-garlic paste and leaves into a paste without water and add into the onion. Mix it properly with a spoon. It will take you  approximately 7 to 10 minutes for this. Add garam masala,turmeric powder and fennel powder into it.


Keep an eye on it and don't burn it .Switch off the flame and let it cool while you make rice. Keep a vessel with water in it it should be double the amount of rice taken. Put some salt in it along with the spices. Wait for it to boil. When the water starts bubbling put the washed rice in it. Don't  move away from the burner once you have put the rice. Check the rice from time-to-time it will only take 5 or 6 minutes for the rice to reach desired  consistency. It should be just cooked -it should leave the hardness and raw taste of rice- drain the rice immediately. 

Comeback to the masala and add yogurt and lemon extract. Mix the washed and drained chicken in it thoroughly. Pour some oil on top of it(take 3 capful). Add 3 tbsp water and put the rice on top of I and pour some more oil on the top preferably at the sides of the pan.Cover it with aluminum foil and close it tightly with the lid.

Keep on the burner in a medium heat for 10min and reduce the flame to low and keep it for 20mins. If you have time you can wait for 10-15minutes before you open. 

After you open take the rice and keep it separately carefully not disturbing the masala layer and then mix the masala thoroughly and serve in another dish. Enjoy 😀 . In the above photo the chicken is fried you can try it too it's tastier than the usual one.
